A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Interior of oven/microwave has accumulation of black substance/grease/food debris. Interior of microwave soiled with food debris. Interior of convention oven soiled with burnt on food debris.
Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Sides of grill soiled with grease and food debris. Hood filters soiled. Fan soiled with grease in kitchen on cooks line. **Repeat Violation**
High Priority - Ready-to-eat, time/temperature control for safety food marked with a date that exceeds 7 days after opening/preparation. Meat loaf dated 12-6 **Repeat Violation**
High Priority - Rodent activity present as evidenced by rodent droppings found. 1 rodent dropping on can of ketchup in dry storage, 3 rodent droppings on floor under dry storage shelf, 2 droppings on shelf on wall over gloves and olive oil in dry storage, 29 rodent droppings on floor in dish area under 3 compartment sink and dish washer, 2 rodent droppings on top of hot water heater, 3 rodent droppings on floor under steam table. **Repeat Violation**
Intermediate - Certified Food Manager or person in charge lacks knowledge of employee health policy and health requirements. Person in charge no knowledge of Big 6 and requirements for employees.
