Violations:
A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust.
ALSO, the cook line reach-in cooler gaskets are soiled.
Observed the coffee caddys on the front line have debris and dried spills on them. These were then being cleaned. **Corrective Action Taken** **Repeat Violation**
High Priority - Chlorine sanitizer in spray bottle not at proper minimum strength.
Observed the sanitizer pans on the front line indicated 0 ppm for chlorine. These were changed out, 100 ppm indicated. **Corrected On-Site** **Repeat Violation** **Admin Complaint**
High Priority - Dishmachine not sanitizing properly. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly.
Observed the dish wash machine reaching only 161° on the rinse gauge and 149° on a resettable thermometer. The booster unit was reset, with the same outcome.
High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit.
Observed in the cook line sandwich table: ham 47°, cut tomato 48°. They chose to discard. Time as a public health control was mentioned by the District Manager. **Corrective Action Taken**
High Priority - Toxic substance/chemical improperly stored.
Observed a bottle of cleaner stored next to a bag of bread on the front line. This was moved to cleaning. **Corrected On-Site** **Repeat Violation** **Admin Complaint**
Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime.
Observed coffee cups on the caddys with stains.
ALSO,the cook line reach-in cooler has an accumulation of food spills.
ALSO, the reach-in cooler closest to the kitchen has spills on the bottom shelf. **Warning**
