Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

08B-38-4    Basic - Food stored on floor. Cooking oil stored on floor in shed behind restaurant.
23-03-4    Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Dish racks that are used to run dishes through the dish machine. Top of ice machine. Can rack next to back door.
16-46-4    Basic - Old labels stuck to food containers after cleaning. Containers stored on shelf above can rack.
08B-12-5    Basic - Stored food not covered. Brewed iced tea on shelf in kitchen next to kitchen entrance.
06-01-5    Basic - Time/temperature control for safety food thawed in an improper manner. Chicken thawed in standing water in a pan in kitchen prep sink.
12A-07-5    High Priority - Employee failed to wash hands before putting on gloves to initiate a task working with food. Employee entered kitchen and put on gloves to handle chips. Inspector stopped employee and had them wash their hands.
35A-02-6    High Priority - Live, small flying insects in kitchen, food preparation area, food storage area and/or bar area. Observed two flies in kitchen.
08A-05-6    High Priority - Raw animal food stored over/not properly separated from ready-to-eat food. Raw beef stored over salsa in kitchen reach-in cooler. Employee placed beef on bottom shelf. **Corrected On-Site**

Items in steam table next to oven: beans (119F - Hot Holding); rice (123F - Hot Holding). Employee stated items reheated on stove at 10 am. Employee reheated items: rice 175F, beans168F. **Corrected On-Site** **Warning**
12A-03-4    Intermediate - Employee washed hands in a sink other than an approved handwash sink. Employee was using three compartment sink to wash hands. Inspector stopped employee and had them wash their hands in the hand washing sink. **Corrective Action Taken**
22-02-4    Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime. Can opener blade of can opener on kitchen prep table.
02C-02-5    Intermediate - Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked. Cooked beef in kitchen reach-in cooler. Employee stated item prepared on 3/19.
