Violations:
A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed on the front of the stainless steel cabinet to the left of the pizza flip top cooler.
Basic - Unnecessary items stored in the rear outside enclosure of the restaurant. Observed discarded ductwork, light fixtures, construction, and other debris.
Basic - Wet wiping cloth not stored in sanitizing solution between uses. Observed wet wiping cloth on the cutting board of the line flip top. Reviewed wiping cloth procedures with the manager and wiping cloth was placed back in solution. **Corrected On-Site**
High Priority - Raw animal food stored over/not properly separated from ready-to-eat food. Observed in the line flip top cooler, raw pork stored above shredded cheese. The manager rearranged the items for proper storage. **Corrected On-Site**
High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit.
Observed in the line flip top cooler, pico de gallo (50F - Cold Holding). Observed the lid of the cooler open during the lunch rush. Manager moved item to lower portion of the cooler to quick chill. **Corrective Action Taken**
Intermediate - Commercially processed ready-to-eat, time/temperature control for safety food opened and held more than 24 hours not properly date marked after opening. Observed pizza sauce in the walk-in cooler not date marked. Manager date marked item. **Corrected On-Site**
Intermediate - Handwash sink does not have enough water pressure to properly wash hands. Observed water turned off at hand wash sink on the cook line. The operator turned the water on.
Intermediate - Probe thermometer not accurate within plus or minus 2 degrees Fahrenheit. Thermometer was calibrated and adjusted. **Corrected On-Site**
Intermediate - Water with a temperature of at least 100 degrees Fahrenheit not provided/shut off at employee handwash sink. Observed water supply turned off. Operator turned water on. **Corrected On-Site**
