A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
High Priority - - From initial inspection : High Priority - Rodent activity present as evidenced by rodent droppings found.
Observed approximately 160 rodent droppings in establishment: 50 in small prep area adjacent to main kitchen line, 65 in main prep area in back on kitchen line, 30 in small storage area where ice machine is located, and 15 in server area near dining room. Operator began cleaning droppings from kitchen floors. **Corrective Action Taken** **Warning** - From follow-up inspection 2021-11-05: At time of inspection,
Behind walk in cooler between wall and walk in cooler by ice machine approximately 20 rodent droppings.
Below dish washer, in corner of wall approximately 15 rodent droppings.
In women's restroom behind second door to stall 5 rodent droppings. **Admin Complaint** - From follow-up inspection 2021-11-10: Observed approximately 40 rodent droppings in establishment: 15 in drip tray below oven in kitchen, 12 behind stand up reach in cooler in prep area, 9 behind reach in cooler near back door and 4 under soda machine in server area.
