Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

40-06-5    Basic - Employee personal items stored in or above a food preparation area, food, clean equipment and utensils, or single-service items. -Observed employee cell phone and keys stored on food preparation table in kitchen.
13-07-4    Basic - Employee wearing jewelry other than a plain ring on their hands/arms while preparing food. -Observed employee wearing black wrist watch while preparing food in kitchen. **Repeat Violation**
36-17-5    Basic - Floor tiles missing and/or in disrepair. -Observed floor tiles missing underneath dish machine in ware wash area in kitchen. -Observes floor tile missing in food preparation areas throughout kitchen. -Observed standing water on floor underneath wait station hand wash sink and dish machine in ware wash area. **Repeat Violation**
10-07-4    Basic - In-use utensil stored in standing water less than 135 degrees Fahrenheit. -Observed knife stored in between omelette station and steam table in kitchen. -Observed multiple Utensils in standing water 81 F stored atop toaster oven in kitchen. **Repeat Violation**
23-03-4    Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. -Observed double door reach in cooler handles soiled with food debris in kitchen. -Observed all reach in cooler shelving and gaskets soiled throughout kitchen. **Repeat Violation**
14-17-4    Basic - Walk-in cooler shelves with rust that has pitted the surface.
36-27-5    Basic - Wall soiled with accumulated grease, food debris, and/or dust. -Observed walls soiled throughout food preparation and ware wash areas in kitchen.
12A-12-4    High Priority - Employee switched from working with raw food to ready-to-eat food without washing hands. -Observed cook cracked raw shell eggs, touched toasted bagel, without disposing of gloves and washing hands. **Repeat Violation**
35A-02-6    High Priority - Live, small flying insects in kitchen, food preparation area, food storage area and/or bar area. -Observed 1 live fly behind bar counter in kitchen.
50-17-2    High Priority - Operating with an expired Division of Hotels and Restaurants license. -Observed current DBPR License expired on 12/1/2021. Instructed Operator to contact DBPR to renew license during inspection. License renewed during inspection, Validation #218561557
03F-02-5    High Priority - Time/temperature control for safety food identified in the written procedure as a food held using time as a public health control has no time marking and the time removed from temperature control cannot be determined. -Observed raw shell eggs, cooked bacon, sausage patties stored next to cook line in kitchen without proper time.
03B-01-6    High Priority - Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. -Observed hollandaise (109F - Hot Holding) at cook line in kitchen. Instructed to reheat to 165 F.
31B-02-4    Intermediate - No paper towels or mechanical hand drying device provided at handwash sink. -Observed no soap, hand towels behind bar counter.
41-17-4    Intermediate - Spray bottle containing toxic substance not labeled. -Observed multiple spray bottles holding quaternary ammonium sanitizer without proper labeling. **Repeat Violation**
