A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Bowl or other container with no handle used to dispense food. Observed in the kitchen: bowls with no handles stored inside containers of seasonings.
Basic - Buildup of food debris/soil residue on equipment door handles. All reach in coolers. Observed employee cleaning the door handles. **Corrective Action Taken**
Basic - Floor soiled/has accumulation of debris. Observed the floor soiled in the kitchen underneath the cooking equipment and reach in coolers. Observed employee cleaning the floor during the inspection. **Corrective Action Taken**
Basic - Unnecessary items/unused equipment on the premises. Kitchen: 2 non-working reach in coolers used as storage. By the office: unused deep fryer .
Intermediate - Menu does not identify which items contain raw or undercooked animal foods covered by the consumer advisory. Establishment offers Bridgewater raw conch, no identified on the menu. Observed operator mark the raw conch with a marker during the inspection. **Corrected On-Site**
Intermediate - No chemical test kit provided when using sanitizer at three-compartment sink/warewashing machine or wiping cloths. Operator could not provide the chlorine test kit at the time of the inspection. **Repeat Violation**
Intermediate - Raw/undercooked animal food offered and establishment has no written consumer advisory. Raw animal foods must be fully cooked prior to service.Discussed and provided the Consumer Advisory to the operator. Operator posted the sign. **Corrected On-Site**
