A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust.Grease build up in between stoves and fryer. Hoods dirty. Rack that stores the coke syrup boxes has a heavily amount of dust.
High Priority - Live, small flying insects in kitchen, food preparation area, food storage area and/or bar area.
Observed on 12-7-2021 :
14 flying insects under three bay sink
2 flying out from reach in cooler that is not working.
3 flying insects flying around condiments not covered at cook line.
Observed no flying insects landing on any food at this time

High Priority - Nonfood-grade containers used for food storage - direct contact with food.Orange Home Depot buckets use to store meat sauce, marinara and dressing at walk in cooler.
Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime.Slicer have food debris . Mold like substance in ice machine.
Intermediate - Handwash sink not accessible for employee use at all times.Hand sink next to three bay sink was blocked by a garbage can and dirty dishes.
Intermediate - Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked.Per cook beef soup cooked on Saturday and has no date marked.
