Violations:
A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Bathroom located inside establishment not completely enclosed with tight-fitting, self-closing doors. Employees bathroom located in the back next to the exit door. **Repeat Violation**
Basic - Employee personal food not properly identified and segregated from food to be served to the public. Observed employee bottle of drink stores inside salad cooler located by back door. **Corrected On-Site** **Repeat Violation**
Basic - Ice buildup in reach-in freezer and/or walk-in freezer. Small chest freezer located by small cafeteria with ice buildup inside. **Repeat Violation**
Basic - Single-service articles improperly stored. Observed case of foam cups stored on floor next to ice machine by front counter. **Corrected On-Site**
High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed cut lettuce (48F - Cold Holding) and cut tomatoes (49F - Cold Holding) stored inside make table by back door. As per operator cut lettuce and cut tomatoes was prepared yesterday afternoon, operator discarded it. **Corrected On-Site**
Intermediate - Handwash sink not accessible for employee use at all times. Observed container stored inside hand washing sink in the kitchen area. **Corrected On-Site**
Intermediate - Handwash sink removed from food preparation/dishwashing area. Must be reinstalled in the same location where removed. Observed hand washing sink located inside employees bathroom inside the kitchen by the back exit door been removed.
Intermediate - Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked. Observed cooked shredded beef stored inside make table in kitchen area not properly date marked. As per operator cooked shredded beef was prepared Wednesday. **Repeat Violation**
