Violations:
A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Ceiling not smooth, nonabsorbent and easily cleanable in food preparation, food storage, or warewashing areas.

1. spinach dip (44-45F); milk (44F); cut watermelon (45F); raw beef (46F) in walk in cooler. Walk in cooler has an ambient temperature of 42.9F. Cook stated cooler door was left opened for a while and close just a few minutes ago. Chef called service person to have cooler check, moved raw beef to freezer and placed ice bags on the rest of the food.
2. crab cake mix (50-51F); raw beef (51F) in flip top cooler in upstairs bar kitchen. Cooler left side door in disrepair and not attached to cooler. Chef stated food was placed in cooler from walk in cooler approximately an hour ago. Chef placed food on ice. **Corrective Action Taken** **Warning**
Intermediate - Handwash sink used for purposes other than handwashing.
Handwash sink in upstairs bar used as a dumping sink. Reviewed policy with chef. **Warning**
