Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

24-08-4    Basic - Equipment and utensils not properly air-dried - wet nesting. In dish area, clean containers stored on rack next to dishwasher stacked while wet. **Repeat Violation**

08B-12-5    Basic - Stored food not covered. In reach in cooler in smaller kitchen adjacent to main kitchen line container of lettuce stored without a cover. 21-12-4    Basic - Wet wiping cloth not stored in sanitizing solution between uses. In smaller kitchen adjacent to main kitchen line wet wiping cloth on cutting board.
12A-13-4    High Priority - Employee handled soiled equipment or utensils and then engaged in food preparation, handled clean equipment or utensils, or touched unwrapped single-service items without washing hands. Employee running dishwasher handled soiled dishes at triple sink, then clean dishes coming out of dishwasher to put on storage rack.

22-02-4    Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime. In small kitchen adjacent to main kitchen line cutting board soiled with food debris. Ice bin interior has buildup of mold like substance. Interior of standup reach in freezer in prep area has build up of food debris mold like substance along the gaskets. **Repeat Violation**
31B-02-4    Intermediate - No paper towels or mechanical hand drying device provided at handwash sink. At hand wash sink in kitchen adjacent to main kitchen line missing paper towels.
41-17-4    Intermediate - Spray bottle containing toxic substance not labeled. In server station closest to pass through window container of chemicals with no labeling. Behind bar by hand wash sink chemical spray bottle with no labeling.
