A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Employee personal items stored in or above a food preparation area, food, clean equipment and utensils, or single-service items. Employee glasses on cutting board. **Warning**
High Priority - Employee began working with food, handling clean equipment or utensils, or touching unwrapped single-service items without first washing hands. Cook started preparing foods no hand wash. **Warning**
High Priority - Live, small flying insects in kitchen, food preparation area, food storage area and/or bar area. 4 live flies in interior bar landing on counter, 5 live flies on exterior bar tap., 1 live fly on turkey in reach in cooler. **Warning**
High Priority - Raw animal food stored over or with ready-to-eat food in a freezer - not all products commercially packaged. Raw comminuted beef over raw salmon in reach in cooler. **Warning**
High Priority - Ready-to-eat, time/temperature control for safety food marked with a date that exceeds 7 days after opening/preparation. Tuna salad dated 2/3 and meatballs dated 2/4. **Repeat Violation** **Warning**

High Priority - Stop Sale issued due to food not being in a wholesome, sound condition. Food contaminated by fly on turkey. Employee touched cooking utensils and surfaces while actively bleeding. **Warning**
High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Sliced turkey 53°f in cooler overnight. **Warning**
High Priority - Toxic substance/chemical improperly stored. Rodent bait and used rodent traps on counter next to cling wrap and clean equipment. **Warning**
Intermediate - Commercially processed ready-to-eat, time/temperature control for safety food opened and held more than 24 hours not properly date marked after opening. Half and half in reach in cooler on front counter no date mark. Employee dated half and half. **Corrected On-Site** **Warning**
Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime. Interior shelves of reach in deli cooler soiled with food debris, can opener blade soiled with food debris. **Warning**
