Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

Stored in upright reach in fridge. Operator stated items were transferred from restaurant and brought to food truck and place there this morning around 9am. Unit was turned on when operator arrived to work since she transfers food back to restaurant walk in cooler at the end of the day. Operator turn up temperature on unit 2. raw shell eggs - ambient temperature (49F - Cold Holding). Stored in reach in cooler make table, place there this morning around 9am after being transferred from restaurant walk in cooler as per operator. Stored in bus tub and small prep bags on prep table next to cashier area. Place there around 9am after being cooked and left out. Operator intention is to have it served at room temperature. Must submit plans and plan review application to DBPR H and R Plan Review office located at 2601 Blair Stone Rd., Tallahassee, FL 32399-1011. Plans must be submitted AND approved within 60 days. At call back today I called and spoke to Plan Review Office in Tallahassee and still no plans were submitted. Operator was given multiple notifications of plans needed to be submitted and had another inspector speak Spanish for more understanding.
