Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

22-20-5    Basic - Accumulation of black/green mold-like substance in the interior of the ice machine/bin. Both ice machine near side door that leads to dumpster area have mold build up inside.
36-36-4    Basic - Ceiling tile missing. Ceiling tile missing over rack in dishwashing area.
50-09-4    Basic - Current Hotel and Restaurant license not displayed.
14-09-4    Basic - Cutting board has cut marks and is no longer cleanable. Cutting boards on cook line near reach in cooler.
12B-07-4    Basic - Employee beverage container on a food preparation table or over/next to clean equipment/utensils. Open lid drink on food prep table.
40-06-5    Basic - Employee personal items stored in or above a food preparation area, food, clean equipment and utensils, or single-service items. iPad on seasoning bin.
36-22-4    Basic - Floor area(s) covered with standing water through kitchen due to missing tile. **Repeat Violation**
08B-38-4    Basic - Food stored on floor. Buckets of chicken on floor of freezer and walk in cooler near dishwasher. Operator placed buckets of chicken on to shelf. **Corrected On-Site**
10-06-5    Basic - In-use utensil not stored with handle above the top of time/temperature control for safety food and rim of the container. Shrimp and oyster bowl on buffet line near front door. Utensil handle in flour and rice bin
33-16-4    Basic - Open dumpster lid.
38-04-4    Basic - Ten (10) foot-candles of light at least 30 inches from floor not provided in walk-in freezer. Had to pull out flashlight to see inside cooler.
12A-16-4    High Priority - Employee began working with food, handling clean equipment or utensils, or touching unwrapped single-service items without first washing hands. Employee was sitting at side with cell phone and touching clothes then went to cook chicken on cook line.
22-48-5    High Priority - Establishment using a sanitizer solution that does not meet the requirements specified in 40 CFR 180. Only use single-service items to serve food to customers until approved sanitizer is available for warewashing. Establishment is using a non approved bleach in three compartment sink and sanitizer buckets.
08A-17-6    High Priority - Raw animal foods not properly separated from one another based upon minimum required cooking temperature when stored in a freezer - not all products commercially packaged. Raw chicken in bin that on top of raw crab. Operator removed chicken bin from reach in freezer. Raw chicken over uncovered raw beef in walk in cooler near dishwashing area. Operator rearranged bins of food. **Corrected On-Site**
08B-01-4    High Priority - Self-service buffet lacking adequate sneezeguards or other proper protection from contamination. Establishment ice cream containers do not prevent the scoop and the customers hands and arms from going below the top of the container in which the ice cream is displayed. Ice cream containers are approximately 18 inches deep.
22-02-4    Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime. Cutting board stained with food debris.
16-32-5    Intermediate - Incorrect chemical test kit provided for measuring the concentration of the sanitizer solution used in the three-compartment sink and/or dishmachine. Quaternary test strips are being used for chlorine sanitizer.
08B-07-4    Intermediate - Serving utensil not provided for each food item at self-service salad bar/buffet. Establishment does not have a running water dipper-well for utensils and each container of ice cream does not have a utensil.
