A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - - From initial inspection : Basic - Food stored on floor.
1) Plastic bottles of hot sauce and bags of breading mix in back storage area.
2) closed containers of portioned sauces in storage area off of kitchen

1) Plastic bottles moved off of floor, bags still on floor. Operator began to rearrange shelves to move bags up.

Basic - - From initial inspection : Basic - Single-service articles not stored inverted or protected from contamination.
Foil pans by cook line and on shelf in back storage area. **Repeat Violation** **Warning** - From follow-up inspection 2022-01-25: Observed at callback inspection same.
1) foil pans by cook line properly inverted.
2) pans on shelf in back storage area not inverted.

Basic - - From initial inspection : Basic - Wall not smooth, nonabsorbent and easily cleanable in food preparation, food storage, warewashing areas or bathroom.
Tiles and/or other wall covering removed in ware washing room exposing sheetrock paper and backing board. **Warning** - From follow-up inspection 2022-01-25: Observed at callback inspection same. **Time Extended**
