Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

10-08-5    Basic - Ice scoop handle in contact with ice. Observed at wait station soda machine. Operator moved handle. **Corrected On-Site**
10-01-5    Basic - In-use utensil in non-time/temperature control for safety sugar not stored with handle above top of food within a closed container. Operator moved handle. **Corrected On-Site**
02D-01-5    Basic - Working containers of salt and sugar removed from original container not identified by common name. Operator labeled. **Corrected On-Site**
08A-05-6    High Priority - Raw animal food stored over/not properly separated from ready-to-eat food. Observed raw steak stored above ready-to-eat sauce in walk-in cooler. Operator reversed. **Corrected On-Site**
03A-02-5    High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. sprouts (48°F - Cold Holding) Observed at wait station flip top cooler, a metal bowl of sprouts sitting on top of a metal pan insert. Explained to operator that airflow will not reach sprouts due to double panning. Operator removed bowl and placed sprouts directly into pan. **Corrected On-Site**
03D-15-4    Intermediate - Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. rice noodles at 12:09 (78-80°F - Cooling)77-80°F at 12:36p. Observed rice noodles to be in a large bowl with plastic wrap on top as it was cooling. Operator took plastic wrap off and moved rice noodles to walk-in freezer for rapid cooling. **Corrective Action Taken**
53B-10-4    Intermediate - Records/documents for required employee training do not contain all of the required information. Training records missing authorized trainer name, trainer's certificate number, date of comp,etiology, and expiration date.
