Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

22-20-5    Basic - Accumulation of black/green mold-like substance in the interior of the ice machine/bin. Observed a black mold like substance inside the ice machine and the golf cart.
24-07-4    Basic - Cleaned and sanitized equipment or utensils not properly stored. Observed a ice bucket stored on the floor near the ice machine.
12B-02-4    Basic - Employee eating in a food preparation or other restricted area. Observed employee open energy drink on the prep directly next to their active preparation and a partial bottle of gatorade in the cold top make table on cooks line, discussed proper storage options with the chef.The drinks were removed from the cooks line. **Corrected On-Site**
25-05-4    Basic - Single-service articles improperly stored. Observed to go cups stored on the floor outside storage area.
08B-62-4    Basic - Unprotected ice machine in a customer/nonsecure area. Observed the one ice machine stored outside in the patio area and another ice machine stored in the maintenance garage.
08B-17-4    Basic - Unwashed fruits/vegetables stored with ready-to-eat food. Observed unwashed fruit stored above pimento cheese in the walk-in cooler.
12A-07-5    High Priority - Employee failed to wash hands before putting on gloves to initiate a task working with food. Observed the expeditor handle a broom and dustpan and change his gloves with out washing his hands.
12A-13-4    High Priority - Employee handled soiled equipment or utensils and then engaged in food preparation, handled clean equipment or utensils, or touched unwrapped single-service items without washing hands. Observed the employee touching dirty dishes and then not washing hands before touching clean dishes. Discussed with the employee to wash hands after handling dirty dishes.
11-13-5    High Priority - Employee with sore/cut/burn/wound on hand, finger or wrist without two layers of impermeable protection on the wound is handling food, clean equipment or utensils, or unwrapped single-service items. Observed the employee handling clean dishes out of the dishwasher wearing a bandage with out a glove or finger cot. Employee got a glove to put on to establish a second barrier. **Corrected On-Site**
08B-56-4    High Priority - Food stored in ice used for drinks. Observed cups of lemons and limes stored in a container that was stored in ice on the beverage cart.
35A-02-6    High Priority - Live, small flying insects in kitchen, food preparation area, food storage area and/or bar area. Observed the following: Approximately 100 small flies came out of drain under the hand sink in side dining room near mens locker room drink service bar that is not in active use.
08A-05-6    High Priority - Raw animal food stored over/not properly separated from ready-to-eat food. Observed raw chicken stored above shelled eggs.
41-10-4    High Priority - Toxic substance/chemical improperly stored. Observed sanitizer placed into a spray bottle that previously had surface cleaner in the spray bottle.
29-34-4    High Priority - Vacuum breaker missing at hose bibb or on fitting/splitter added to hose bibb. Observed a splitter installed on the mop sink faucet. The backflow is not installed to prevent back siphonage on the side of the splitter where a hose is attached that is laying in the mop sink. Observed a spicket next to the ice machine with out a back flow preventer.
11-07-5    Intermediate - Certified Food Manager or person in charge lacks knowledge of foodborne illnesses and symptoms of illness that would prevent an employee from working with food, clean equipment and utensils, and single-service items. Chef in the kitchen did not know the Big 6 foodbourne illnesses which lets you know the inclusion of employees able to work.
22-02-4    Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime. Observed can opener blade with debris on the blade. Dishwasher washed, rinsed and sanitized the blade. Observed the slicer blade with dried meat on the slicer. **Corrected On-Site**
31A-11-4    Intermediate - Handwash sink used for purposes other than handwashing. Observed the secondary bar handsink being used as a dump sink with a screen tray of ice,garnishes and teaspoons in the hand washing sink.Discussed the proper use of hand washing sinks with the operator.
53A-01-7    Intermediate - Manager or person in charge lacking proof of food manager certification. Due to the private event manager was too busy to get CFM. Zach and Glen.
31A-12-4    Intermediate - No handwash sink for employees. Operator indicates that ice for beverages is scooped on the golf cart and a hand washing sink is not present on the golf cart. Informed the operator that scooping the ice without a hand washing sink on the cart can't be done.
31B-02-4    Intermediate - No paper towels or mechanical hand drying device provided at handwash sink. Observed no paper towels at the hand sink at the service bar. No hand drying device in the side remote bar.
51-16-7    Intermediate - No plan review submitted and approved - renovations were made or are in progress. Must submit plans and plan review application to DBPR H and R Plan Review office located at 2601 Blair Stone Rd., Tallahassee, FL 32399-1011. Plans must be submitted AND approved within 60 days. Observed on file drawings do not indicate locations of outside ice machine and ice machine in maintenance garage where handsinks are missing.
53B-01-5    Intermediate - No proof of required state approved employee training provided for any employees. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233. Due to the private party manager was too busy to get the training certificates.
29-28-4    Intermediate - Water treatment device has not been inspected or serviced according to manufacturer's instructions. Observed the water filters missing their expiration date so they do not exceed one year of use.
