Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

05-11-4    Basic - Ambient air thermometer not located in the warmest part of the cold holding unit. Obsessed the thermometer mounted on the blower vent inside the sandwich make table instead of a location where it's warmest. Operator cleaned the thermometer and moved to the front of a drawer. **Corrected On-Site** **Warning**
36-34-5    Basic - Ceiling/ceiling tiles/vents soiled with accumulated food debris, grease, dust, or mold-like substance. Observed dust/dirt buildup on ceiling vents in the kitchen and restrooms. **Warning**
24-27-4    Basic - Clean equipment/dishware/utensils stored next to handwash/food preparation sink exposed to splash. Observed tongs on the counter directly beside the hand washing sink. Discussed creating visual barriers and reminders for staff to not place anything around hand washing sinks. The tongs were taken to the dish washing area for washing rinsing and sanitizing. **Corrective Action Taken** **Warning**
12B-07-4    Basic - Employee beverage container on a food preparation table or over/next to clean equipment/utensils. Observed a personal beverage on the shelf in the walk-in refrigerator inside the beverage access door, 2 on the preparation table by the oven, one on the shelf under the coffee station. Discussed storage of employee drinks. The drinks were moved from the found locations and a container was placed on a lower shelf rack for employee drinks. **Corrected On-Site** **Warning**
14-11-4    Basic - Equipment in poor repair. Observed a broken glass in one ice cream case, glass debris present, at the register end of the scooping cases. **Warning**
36-73-4    Basic - Floor soiled/has accumulation of debris. Observed food and debris buildup on the floor back under equipment, along walls, and along equipment. **Warning**
36-17-5    Basic - Floor tiles missing and/or in disrepair. Observed flor tiles missing around ice cream cabinet drains **Warning**
14-69-4    Basic - Ice buildup in reach-in freezer and/or walk-in freezer. Observed ice buildup on the floor of the walk-in freezer **Warning**
10-08-5    Basic - Ice scoop handle in contact with ice. Observed the handle of the ice scoop laying in the ice in the bin across from the espresso machine. Ice scoop was placed with handle extending out of the ice. **Corrected On-Site** **Warning**
10-07-4    Basic - In-use utensil stored in standing water less than 135 degrees Fahrenheit. Observed utensils stored in standing water. Discussed approved methods of running dipper well, water 135F or greater, or clean and dry. Utensils were removed from standing water. **Corrected On-Site** **Warning**
10-03-4    Basic - In-use utensil used with moist food stored in running water with insufficient velocity to flush food particles away. Observed water not flowing in one dipper well to flush away food debris. **Warning**
23-03-4    Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed food debris and residual buildup on equipment throughout. Observed food residual buildup inside the bottom of the single door make table behind the baskin registers, blackened buildup in door gaskets on equipment, on counters back under espresso equipment, **Warning**
36-27-5    Basic - Wall soiled with accumulated grease, food debris, and/or dust. Observed food splatter on wall behind ice cream area. **Warning**
03A-02-5    High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed cooked egg rounds (52F - Cold Holding); turkey sausage (46F - Cold Holding); sausage (52F - Cold Holding) in the sandwich station. Operator indicates that the items were loaded into the unit at 7:30 am, today. The thermometer is illegible. The items were moved to the walk-in freezer to rapid chill. **Corrective Action Taken** **Warning**
22-02-4    Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime. Observed food and slime-looking substance in the bottom of the ice cream cabinet dipper wells, pink and black slime substance inside the ice maker bin. The dipper wells were cleaned during the inspection. And slime wiped away from the inside of the ice maker bin. **Corrected On-Site** **Warning**
31A-09-4    Intermediate - Handwash sink not accessible for employee use at all times. Observed a bin of bagels left on the front of the hot line hand washing sink upon entering the area for the inspection. Discussed with the employee and then the manager about not placing items in or around hand washing sinks. The bagels were removed from the area. **Corrected On-Site** **Warning**
53A-05-6    Intermediate - No currently certified food service manager on duty with four or more employees engaged in food preparation/handling. Observed at least 6 employees present and a certified manager is not present. **Warning**
