Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

36-03-4    Basic - Cove molding at floor/wall juncture broken/missing. Observed wall tiles and cove molding missing at the warewashing area located inside the kitchen by the back door exit. **Repeat Violation**

12B-07-4    Basic - Employee beverage container on a food preparation table or over/next to clean equipment/utensils. Observed employee bottle of drink stored on top of prep table in the kitchen area.
36-22-4    Basic - Floor area(s) covered with standing water. Observed standing water on floor inside walk in cooler.
36-73-4    Basic - Floor soiled/has accumulation of debris. Located inside the walk in cooler and walk in freezer floor.
08B-38-4    Basic - Food stored on floor. Observed oil, rice and beans stored on floor by the back dry storage room. **Repeat Violation**
21-04-4    Basic - In-use wet wiping cloth/towel used under cutting board. **Corrected On-Site**
36-62-4    Basic - Light not functioning. Observed one light not functioning at the fish market area.
38-07-4    Basic - Lights in food preparation, food storage or warewashing area missing the proper shield, sleeve coatings or covers. Located at the fish market area.
16-04-4    Basic - No drainboards or equivalent provided for soiled items and/or air drying cleaned items. Located at the ware-washing area located inside the kitchen. **Repeat Violation**
23-03-4    Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed standing cooler gasket soiled located in the kitchen area.
22-16-4    Basic - Reach-in cooler interior/shelves have accumulation of soil residues. Observed interior of standing freezer soiled located at the fish market.
14-33-4    Basic - Reach-in cooler shelves with rust that has pitted the surface. Standing cooler located in the kitchen area.

36-27-5    Basic - Wall soiled with accumulated grease, food debris, and/or dust. Throughout the kitchen area.
42-01-4    Basic - Wet mop not stored in a manner to allow the mop to dry.
11-07-5    Intermediate - Certified Food Manager or person in charge lacks knowledge of foodborne illnesses and symptoms of illness that would prevent an employee from working with food, clean equipment and utensils, and single-service items. Provided operator with flyer. **Corrective Action Taken**
22-02-4    Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime. Observed cutting board soiled.
53B-13-5    Intermediate - Proof of required state approved employee training not available for some employees. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233. Observed employees Julian Vieda and David Padilla with no employee training. As per manager employee has been working at the establishment for more than 2 months. **Repeat Violation**
