Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

10-17-4    Basic - In-use knife/knives stored in cracks between pieces of equipment. Knife removed. **Corrected On-Site**
12B-13-4    Basic - Opened employee beverage container in a cold holding unit with food to be served to customers, at pizza station. Drink removed. **Corrected On-Site**
12A-13-4    High Priority - Employee handled soiled equipment or utensils and then engaged in food preparation, handled clean equipment or utensils, or touched unwrapped single-service items without washing hands. Dishwater requested to wash hands and change gloves. **Corrected On-Site**
03A-02-5    High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. 1) Suate station -ham (47F); meat sauce (47F); butter (47F); cheese (47F) . TCS foods in cooler less than 4 hours and temperature checked earlier at 41F by Chef. Ice added to quick chill and no foods to be stored in unit over night. 2) batter (43-50F) on ice. Ice level shallow, Batter on ice ice less than 3 hours per cook and ice added. **Corrective Action Taken**
31A-09-4    Intermediate - Handwash sink not accessible for employee use at all times. Lobster thawing in hand sink by walk in cooler. Container removed. **Corrected On-Site**
27-16-4    Intermediate - Water with a temperature of at least 100 degrees Fahrenheit not provided/shut off at employee handwash sink at cook line.
