A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

03A-02-5    High Priority - - From initial inspection : High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. 1. ) raw chicken (44-45F); raw steak (44F) in walk in cooler. Cooler has an ambient temperature of 39F but door does not properly shut. Manager stated raw meats were received in Monday. Manager placed ice bags over food. 2. cut tomatoes (68F); shredded cheddar (66F) in small cooler on left side of the front cook line. Cooler was turned off and manager stated food was placed in cooler from walk in cooler approximately an hour ago. Manager placed ice under food and turned cooler on. **Corrective Action Taken** **Warning** - From follow-up inspection 2022-05-20: All food items are 41 or below except steak 44F stored in the walk in cooler from previous day **Time Extended**
03B-01-6    High Priority - - From initial inspection : High Priority - Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Pulled pork 75F in primary hot holding cabinet on the right side of the cook line. Manager stated pork was recently reheated and placed in cabinet to hold hot.
