A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

Operator added ice bags on top to quick chill. cooked duck (49F - Cold Holding); raw chicken (49F Cold Holding); shrimp (50F - Cold Holding); crab meat (49F - Cold Holding) in reach in drawers at cook line next to fryers; As per operator food was not prepared or portioned today. Food out of temperature for less than four hours. Foods moved to a different reach in cooler to quickly chill. shredded lettuce (49F - Cold Holding); shredded cabbage (49F - Cold Holding); in reach in cooler#3 at cook line across from fryers. As per operator food left in the cooler overnight; no tops; no temperature logged at that time; food out of temperature for more than 4 hours; See Stop Sale **Corrective Action Taken** **Warning** - From follow-up inspection 2022-06-20: #1: shredded cabbage 41°F sliced tomatoes 40°F. Sprouts 41°F. #2: unit is not in use. Operator has repair technician on site at time of inspection. #3 Shredded cabbage 47°F. Shredded lettuce 48°F. Butter 48°F. Operator has repair technician working on unit while we checked items. Operator added ice bags to hold product during repair while unit was turned off. **Admin Complaint**
