A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Ceiling tile missing. Observed ceiling tiles missing over the mopsink area by the dish pit. Operator indicates ceiling replacement to be completed this week. **Warning**
High Priority - Dented/rusted cans present. See stop sale. Observed 5 cans of dented canned cheese, green beans, and corned beef hash on the can rack in the kitchen. Items were pulled into the office for return. **Corrected On-Site** **Warning**
High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed diced chicken (56F - Cold Holding); diced ham (50F - Cold Holding); seafood salad (46F - Cold Holding);in the buffet. Time tags are not present. Items were replaced with food at 39-41F **Corrective Action Taken** **Warning**
High Priority - Time/temperature control for safety food identified in the written procedure as a food held using time as a public health control has no time marking and the time removed from temperature control cannot be determined. Observed time marks not in place for cold buffet and diced chicken (56F - Cold Holding); diced ham (50F - Cold Holding). The items were replaced with product at 39F and time tags applied to remaining items. **Corrective Action Taken** **Warning**
Intermediate - Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. Observed cheesy potatoes at 61F within cooling parameters yet covered and stacked more than 5 containers deep. Operator removed the covers and placed on the speed rack for cooling. **Corrective Action Taken** **Warning**
Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime. Observed blackened buildup in the ice chute of the ice maker in the main server station. **Warning**
Intermediate - Water treatment device has not been inspected or serviced according to manufacturer's instructions. Observed water filters not dated for installation date or expiration date 1 year after installation. **Warning**
