Violations:
A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Food stored on floor. There is a pot of stewed tomatillos and a pot of frozen beef tongue on the floor between the hand washing sink and the three door upright reach in cooler.
Basic - In-use tongs stored on equipment door handle between uses. There are tongs hanging from the oven door handle. Operator removed the tongs. **Corrected On-Site**
Basic - Time/temperature control for safety food thawed in an improper manner. There is frozen beef tongue thawing at room temperature in a pot on the floor in the kitchen. There is fish thawing at room temperature by the three compartment sink. There is pork thawing at room temperature in the three compartment sink.
Basic - Uncovered food stored near sink exposed to splash. In the three compartment sink pork is thawing in a sink next to the middle sink filled with soapy water. Operator drained the soap. **Corrective Action Taken**
High Priority - Raw animal food stored over or with unwashed produce. In the walk-in cooler raw beef and raw sausage are stored over unwashed onions, pineapples.
High Priority - Raw animal food stored over/not properly separated from ready-to-eat food. In the double door upright reach in cooler in front of the cooks line raw beef and raw sausage are stored over cooked pork and cut lettuce. This is a repeat violation from 2/16/2022. **Repeat Violation** **Admin Complaint**
High Priority - Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. In the steam table pinto beans (124F - Hot Holding); rice (127F - Hot Holding). Operator moved the pinto beans and rice to the stove for rapid heating. **Corrective Action Taken**
Intermediate - Handwash sink not accessible for employee use at all times. The hand washing sink by the dish washing area has a potato chopper inside of it and a pot of stewed tomatillos in front of it. This is a repeat violation from 2/16/2022. **Repeat Violation**
Intermediate - No soap provided at handwash sink. There is no soap at the hand washing sink on the cook's line or at the hand washing sink by the dish washing area.
Intermediate - Raw, in-shell clams/mussels/oysters from different original containers mixed together prior to preparation for service. In the two door under table reach in cooler raw oysters are commingled. The oyster tags are from harvest date 7/8/2022, harvest location 3, LA-2360-SS and two tags harvest date 7/2/2022, harvest location area 424, TX-636-SS.
