A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - In-use knife/knives stored in cracks between pieces of equipment. Front counter at cold holding unit- observed chef knife being stored between cold holding unit and toaster. **Warning**
Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Front counter speed rack at coffee machine- observed dust and debris on speed cart. **Warning**
Basic - Wall soiled with accumulated grease, food debris, and/or dust. Observed walls soiled with mold like substance at 3 compartment sink.

High Priority - Live, small flying insects in kitchen, food preparation area, food storage area and/or bar area.

Front counter- observed 3 live flying insects flying over sliced tomatoes and sautéed mushrooms on cold holding unit.
- main kitchen bread rack across from prep sink- observed 3 live flying insects flying over bread on bread rack. Bread was inside original packaging.
- dining area men restroom door- observed 4 live flying insects flying around men restroom entrance door.
Front counter speed rack with syrup- observed 1 live flying insects flying over syrup dispenser bottles.
- main kitchen prep table across from 3 compartment sink- observed approximately 8 live flying insects flying over and landing on open case of whipped cream spread and Togo containers. Togo containers was inside original packaging.
-front counter high temperature dish machine-observed 3 live flying insects flying around clean dishes.

High Priority - Raw animal foods not properly separated from each other in holding unit based upon minimum required cooking temperature. Front counter reach in cooler behind register- observed raw chicken being stored over raw NY Strip. Operator stored raw chicken underneath raw NY Strip. **Corrected On-Site** **Warning**
High Priority - Stop Sale issued on time/temperature control for safety food due to temperature abuse. Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Front counter Delfield reach in cooler- observed chocolate milk 46 degrees F. Operator stated chocolate milk was inside reach in cooler since 02/23/2023 2p.m. and hasn't been moved. See Stop Sale. **Warning**
High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Front counter Delfield reach in cooler- observed chocolate milk 46 degrees F. Operator stated chocolate milk was inside reach in cooler since 02/23/2023 2p.m. and hasn't been moved. See Stop Sale. **Warning**
Intermediate - No proof of required state approved employee training provided for any employees. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233. **Warning**
Intermediate - Water with a temperature of at least 100 degrees Fahrenheit not provided/shut off at employee handwash sink. Observed in main kitchen at 3 compartment sink- no hot water.
Men and Female restroom- observed no hot water at hand washing sink. **Warning**
