A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

13-03-4    Basic - Employee with no hair restraint while engaging in food preparation. Observed employee engaged in food preparation without a hair restraint in kitchen area.
14-11-5    Basic - Equipment in poor repair. Observed reach in cooler with broken handles.
36-01-4    Basic - Floor not cleaned when the least amount of food is exposed. Throughout the kitchen area.
36-17-5    Basic - Floor tiles missing and/or in disrepair. Observed tile broken next to buffet area.
10-17-4    Basic - In-use knife/knives stored in cracks between pieces of equipment. Observed utensils stored between three compartment sink and wall. Manager removed utensils. **Corrected On-Site**
05-09-4    Basic - No conspicuously located ambient air temperature thermometer in holding unit. Observed no ambient thermometer available in reach in coolers and upright coolers. **Repeat Violation**
23-03-4    Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed hoods soiled with grease. **Repeat Violation**
22-16-4    Basic - Reach-in cooler interior/shelves have accumulation of soil residues. Observed reach in shelves soiled in kitchen area. **Repeat Violation**
06-01-5    Basic - Time/temperature control for safety food thawed in an improper manner. Observed raw chicken being thawed under still water. Manager opened drain and running water. **Repeat Violation**
14-17-4    Basic - Walk-in cooler/freezer shelves with rust that has pitted the surface. Kitchen area.
36-27-5    Basic - Wall soiled with accumulated grease, food debris, and/or dust. Throughout the kitchen area.
21-12-4    Basic - Wet wiping cloth not stored in sanitizing solution between uses. Observed towels in use not stored in sanitizer water in prep area. **Repeat Violation**
02D-01-5    Basic - Working containers of food removed from original container not identified by common name. Observed marinated meats and chicken not labeled and stored in reach in coolers.
14-31-5    High Priority - Nonfood-grade bags used in direct contact with food. Observed non grade food bags being used to store food in reach in coolers in the kitchen area. **Repeat Violation**
22-02-4    Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime. Observed cutting boards soiled in kitchen areas.
31A-09-4    Intermediate - Handwash sink not accessible for employee use at all times. Observed hand washing sink blocked by a cart with product. Manager moved the obstruction. **Corrected On-Site** **Repeat Violation**
31A-11-4    Intermediate - Handwash sink used for purposes other than handwashing. Observed hand washing sink used as storage for dirty utensils. Manager moved them to three compartment sink. **Corrected On-Site**
