Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

12B-02-4    Basic - Employee eating in a food preparation or other restricted area. Observed employee eating and drinking in dry storage area.
36-17-5    Basic - Floor tiles missing and/or in disrepair. Observed missing tiles or tiles in disrepair throughout kitchen.
08B-38-4    Basic - Food stored on floor. Observed bag of onions stored on floor outside the back door of kitchen . Manager removed and stored properly. **Corrected On-Site**
21-04-4    Basic - In-use wet wiping cloth/towel used under cutting board. Observed wet wiping cloth under cutting board across from dish machine. Manager removed cloth from cutting board. **Corrected On-Site** **Repeat Violation**
06-01-5    Basic - Time/temperature control for safety food thawed in an improper manner. Observed large bucket with frozen boxes of krab meat stored on floor near mop sink to thaw. Reviewed proper thawing procedures with manager. Manager placed bucket in walk in cooler. **Corrective Action Taken**
22-41-4    High Priority - Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed Dish machine at 0ppm during inspection. Manager was able to get Dish machine to 100ppm. **Corrected On-Site**
12A-20-4    High Priority - Employee washed hands with no soap. Observed employee pick up dead roach and wash hands in bucket of water. I asked manager what was in the bucket and he Stated it was just water prior to using it to wash his hands. Reviewed with manager proper hand washing procedures. 08A-05-6    High Priority - Raw animal food stored over/not properly separated from ready-to-eat food. Observed Shell eggs stored over ready to eat sauces in flip top reach in cooler across from fryers. **Corrected On-Site** **Repeat Violation** **Admin Complaint**
31A-11-4    Intermediate - Handwash sink used for purposes other than handwashing. Observed operator washing out wet wiping cloth in hand sink located at entrance of kitchen. Reviewed with operator the code on hand washing stations are only for hand washing only.
