A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Food stored on floor. Box of chicken stored on floor in walk in freezer and box of oil stored on floor between fryer and prep table on cook line . Explained **Warning**
Basic - In-use utensil stored in standing water less than 135 degrees Fahrenheit. Rice spatula stored in a container in standing water by rice cooker. Water temperature 78 f. Explained and manager dumped the water. **Corrected On-Site** **Warning**
High Priority - Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Dishwasher chlorine 0 ppm. Tested twice. Tried to prime several minutes. No chemical dispensed.
Advised to setup three compartment sink. **Warning**
High Priority - Food-contact surfaces not sanitized after cleaning, before use. Do not use equipment/utensils not properly sanitized. Pots and pans washed rinsed and put away without sanitizing. Explained and showed him the sanitizer sign on the three compartment sink. **Warning**
High Priority - Raw animal food stored over or with ready-to-eat food in a freezer - not all products commercially packaged. Raw beef in plastic sleeve stored on top of ice bag in walk in freezer . Explained and showed posted chart for proper storage of refrigerated food. **Warning**
High Priority - Roach activity present as evidenced by live roaches found.

Intermediate - Handwash sink not accessible for employee use at all times. Green basket stored in hand sink by three compartment sink . Explained and manager removed the basket. **Corrected On-Site** **Warning**
