A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Floor soiled/has accumulation of debris. Under large cooking equipments.

High Priority - Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly.
Ran dish machine multiple times, tested 0ppm chlorine. Operator informed employee to sanitize food contact surfaces manually in three compartment sink, and contacted the dish machine service company at time of inspection. **Corrective Action Taken** **Repeat Violation** **Warning**
High Priority - Employee failed to wash hands before putting on gloves to initiate a task working with food.
Observed employee picked up a raw steak from reach-in cooler with barehand, placed on grill then put on gloves without washing hands. Discussed with operator about proper hand washing procedures. **Warning**
High Priority - Food-contact surfaces not sanitized after cleaning, before use. Do not use equipment/utensils not properly sanitized.
Dish machine tested 0ppm chlorine. Employee starts re sanitizing clean food equipments. **Corrective Action Taken** **Warning**

Raw fish and raw pork stored over cooked bean and other cooked items in walk-in cooler. Operator moved raw items to other shelves. **Corrected On-Site** **Warning**

Multiple cases of beers and other bottled drinks blocked handwash sink at liquor bar.
