Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

23-03-4    Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed mold like substance build up reach in cooler gasket.
42-03-5    Basic - Storage of maintenance equipment/tools in areas that may result in cross contamination of food, equipment, utensils, linens and/or single-service and single-use articles. Observed pliers and screw driver on cutting board. Management removed items and stored properly. **Corrected On-Site**
08B-12-5    Basic - Stored food not covered. -Observed Tomato sauce and soup in walk in cooler not covered. Management corrected violation. **Corrected On-Site**
14-12-4    Basic - Utensils in poor condition. Rubber Spatula deteriorating and was thrown out and replaced
36-27-5    Basic - Wall soiled with accumulated grease, food debris, and/or dust. 1. Observed wall at 3 compartment sink soiled with black mold like substance. 2. Observed accumulation of black mold like substance buildup on light shield and AC vents at cookline.
22-41-4    High Priority - Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed dishwasher test strips at 00 ppm
12A-10-4    High Priority - Employee touched bare body part and then engaged in food preparation, handled clean equipment or utensils, or touched unwrapped single-service items without washing hands. Educated employee when touching face need remove gloves and wash hands before putting on new gloves.
08A-20-5    High Priority - Raw animal foods not properly separated from each other in holding unit based upon minimum required cooking temperature. -Observed raw beef stored over vegetables blend in walk in freezer.
02C-02-5    Intermediate - Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked. Observed cooked potatoes stored in walk in cooler not dated marked. As per operator, potatoes were cooked on 11/27/2022.
