A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Employee beverage container on a food preparation table or over/next to clean equipment/utensils.
Employee open water bottle above clean dishes at dish rack- operator removed. **Corrected On-Site** **Warning**
Basic - Employee personal items stored in or above a food preparation area, food, clean equipment and utensils, or single-service items.
Employee food over sauces and meats in walk in cooler- operator removed. **Warning**
High Priority - Raw animal food stored over/not properly separated from ready-to-eat food.
At walk in cooler raw pork stored over sauces- operator removed pork to lower shelf. **Corrected On-Site** **Warning**
High Priority - Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit.
At rotisserie station- by main cookline - Cooked whole chicken 128-133F - hot holding- operator states food out of temperature for 15 minutes- operator turned on rotisserie oven to reheat to 165F.
At steam table near at front counter- boiled yuca 101-115F- hot holding, cooked potatoes 98-107F- hot holding- operator states food out of temperature for 1 hour- operator placed on stove to be reheated.
At reach in steam table drawers by rotisserie station- cooked quartered chicken-116-133F- hot holding - operator states food out of temperature for 10 minutes- operator placed chicken to be reheated. **Corrective Action Taken** **Warning**
Intermediate - Handwash sink not accessible for employee use at all times.Handwash sink blocked by prep table at cookline - operator removed. **Warning**
