A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Ceiling not smooth, nonabsorbent and easily cleanable in food preparation, food storage, or warewashing areas. The ceiling is not smooth and easily cleanable over the cook line and the cold line. This is a repeat violation from 12/14/2021, 7/8/2021, 2/26/2021. **Repeat Violation** **Warning**
Basic - Damaged/spoiled/recalled food not properly segregated. In dry storage there is a 106 ounce can of marinara sauce on the shelf with a dented rim. See stop sale. **Warning**
Basic - Employee personal items stored in or above a food preparation area, food, clean equipment and utensils, or single-service items. On the shelf above the toaster there is an employee cellphone between bread and English muffins. **Warning**
Basic - Wet wiping cloth not stored in sanitizing solution between uses. There is a wet wiping towel on top of the reach in cooler in the servers area. **Warning**

High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. On the make table there is a container of pooled eggs (48F - Cold Holding). Operator moved the pooled eggs to the bottom of the cooler, inspector supplied the operator with time as a public health control. Corrective action taken. This is a repeat violation from 12/14/2021. in the single door reach in cooler in the pantry area, chicken salad (48F - Cold Holding); tuna salad (47F - Cold Holding); ham (47F - Cold Holding). Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime. There is a mold like substance on the side walls in the ice machine. This is a repeat violation from 12/14/2021, 7/8/2021. **Repeat Violation** **Warning**
