A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Accumulation of black/green mold-like substance in the interior of the ice machine/bin.
Ice machine in a back outside storage area, and ice machine at dishwashing area.
Ice bins at wait station.
Employee cleaned ice machine and ice beans during inspection.

Basic - Ceiling not smooth, nonabsorbent and easily cleanable in food preparation, food storage, or warewashing areas.
Observed no smooth ceiling above ice cream station. Visible roof construction.
As a repeat violation the importance of following proper protocol with this violation was reinforced with the employee. **Repeat Violation**
Basic - Employee beverage container on a food preparation table or over/next to clean equipment/utensils.
Observed bottled water stored on prep table. Employee discarded the bottle. **Corrected On-Site**
Basic - Ice buildup in reach-in freezer holding Ice cream, and reach in freezers stored in back fenced area outside of establishment.
As a repeat violation the importance of following proper protocol with this violation was reinforced with the employee. **Repeat Violation**
Basic - Wiping cloth chlorine sanitizing solution not at proper minimum strength.
Observed 00ppm concentration of chlorine in sanitizer bucket. Employee add new solution of chlorine to sanitizer bucket. New reading 50ppm of chlorine. **Corrected On-Site**
High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit.
Following items cut tomatoes (55F - Cold Holding); ham (51F - Cold Holding) were stored in the reach in cooler on cook line. Employee stated that items were in the reach in cooler for 2 hours. Employee placed items on ice. **Corrective Action Taken**
High Priority - Vacuum breaker missing at hose bibb or on fitting/splitter added to hose bibb.
Observed outside hose missing vacuum breaker. Manager order the vacuum breaker. **Corrective Action Taken**
Intermediate - Required employee training provided by a third-party employee training program and operator unable to provide original certificate for employees trained.
Observed copies of employee training.
