A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Employee personal items stored in or above a food preparation area, food, clean equipment and utensils, or single-service items. **Repeat Violation** **Warning**
High Priority - Cooked/heated time/temperature control for safety food not cooled from 135 degrees Fahrenheit to 41 degrees Fahrenheit within 6 hours. Observed cooked shredded chicken (47F - Cooling) stored inside walk in cooler. As per operator cooked shredded chicken we prepared yesterday morning. **Warning**
High Priority - Employee failed to wash hands before putting on gloves to initiate a task working with food. Observed employee putting new glove without wash hands first in the pizza section. Operator was coached to washed hands. **Corrected On-Site** **Warning**
High Priority - Live, small flying insects in kitchen, food preparation area, food storage area and/or bar area. Observed 3 flies flying in the kitchen area not touching food. **Warning**
High Priority - Raw animal food stored over/not properly separated from ready-to-eat food. Observed raw lobster tail over ice cream inside standing freezer by pizza station. **Corrected On-Site** **Warning**
High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed raw pork chop (46F - 45F - Cold Holding)stored inside walk in cooler. **Warning**
High Priority - Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed cooked salmon (120F - Hot Holding); cooked calamari (122F - Hot Holding), cooked ribs (118F - Hot Holding)on the steam table, per operator has been there approximately 45 minutes before the inspection, operator returned to the stove and reheated to 185°F. **Corrected On-Site** **Warning**
