A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Accumulation of black/green mold-like substance in the interior of the ice machine/bin.
Observed the interior of main ice machine to be soiled. **Warning**
Basic - Buildup of food debris/soil residue on equipment door handles.
Observed the upright coolers door handles to be soiled next to ware washing area **Warning**
Basic - Ceiling/ceiling tiles/vents soiled with accumulated food debris, grease, dust, or mold-like substance.
Observed ceiling tiles throughout kitchen to be soiled.
Observed ceiling vents throughout kitchen to be soiled. **Repeat Violation** **Warning**
Basic - Equipment and utensils not properly air-dried - wet nesting.
Observed sauce pans wet nesting being stored on clean storage rack at ware washing area. **Warning**
Basic - Interior of oven/microwave has accumulation of black substance/grease/food debris.
Observed microwave on cook line near grill to be soiled.
Manager had employee clean **Corrected On-Site** **Warning**
High Priority - Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly.
Observed Dish machine at 0 ppm.

High Priority - Employee rubbed hands together for less than 10-15 seconds while washing hands.
Employee washed hands and rubbing hands together for 4-5 seconds. Discussed proper hand washing procedures and employee rehashed hands properly rubbing hands together for 15 seconds **Corrective Action Taken** **Warning**
High Priority - Live, small flying insects in kitchen, food preparation area, food storage area and/or bar area.
Observed 3 flying insects in kitchen. **Repeat Violation** **Admin Complaint**
High Priority - Raw animal foods not properly separated from each other in holding unit based upon minimum required cooking temperature.
Observed Raw eggs being stored over Raw Shrimp and Raw fish in upright cooler near ware washing area.

High Priority - Rodent activity present as evidenced by rodent droppings found.

High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit.
ambient temperature of shelled eggs (50F - Cold Holding) in walk in cooler. Employee rushed eggs from kitchen counter into walk in cooler upon inspectors arrival.. operator stated he will keep eggs in cooler. **Admin Complaint**
Intermediate - Handwash sink not accessible for employee use at all times.
Observed hand washing station blocked located near dry storage by garbage can on wheels.
