A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Ceiling/ceiling tiles/vents soiled with accumulated food debris, grease, dust, or mold-like substance.
1) Ceiling vents in kitchen soiled with black/green mold like substance.
Basic - Dead roaches on premises.
1) 1 dead roach in bucket of used cooking oil near fryers. Discussed with person in charge. Person in charge had employee dump oil in forage container outside. **Corrected On-Site**
Basic - Food stored on floor.
1) 4 Cases of food on floor in walk-in freezer. Discussed with person in charge.
2) pickle spears and onions on floor in walk-in cooler. **Repeat Violation**
Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust.
1) walk-in cooler shelves soiled with food and black/green mold like substance.
2) gaskets on flip-top cooler and walk-in cooler soiled with black/green mold like substance. **Repeat Violation**
High Priority - Shell eggs in use or stored with cracks or broken shells. See stop sale.
1) 4 cracked shell eggs in walk-in cooler. Person in charge disposed of eggs. **Corrected On-Site**
Intermediate - Commercially processed ready-to-eat, time/temperature control for safety food opened and held more than 24 hours not properly date marked after opening.
1) milk reach in cooler not date marked. Person in charge added date mark. **Corrected On-Site**
Intermediate - No written procedures available for use of time as a public health control to hold time/temperature control for safety food.
1) previous management misplaced paper work. Provided new manager paperwork and they filled out during inspection. **Corrected On-Site**
