Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

01B-02-5    High Priority - Stop Sale issued on time/temperature control for safety food due to temperature abuse. Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed packaged salted fish 55°F in 2 door glass cooler in kitchen. 03E-02-5    High Priority - Time/temperature control for safety food reheated for hot holding not reaching 165 degrees Fahrenheit for 15 seconds within 2 hours. Jerk Pork (108°-110°F) at 9:30am reheating since 9:00 to 84°-100°F at 10:30am. Cook reheated pork 175°F. **Corrected On-Site** **Warning**

(1) Observed boiled dumplings (125-134°F- Hot holding); plantains (101°-120°F - hot holding) at front counter steam table, per operator items were prepared less than 4 hours. Operator reheated Dumplings 146°F (2) Observed Jerk Pork (108°-110°F - Reheating) per operator pork was in hot box for less than 4 hours. Operator reheated pork.
