Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

36-34-5    Basic - Ceiling/ceiling tiles/vents soiled with accumulated food debris, grease, dust, or mold-like substance. Observed dust accumulation on ceiling tiles/vents throughout kitchen area.
14-11-5    Basic - Equipment in poor repair. Observed door/door hinges of chest freezer in disrepair, located at coffee/dessert station. Observed cracked sliding door panel of display cooler at coffee/dessert station.
36-22-4    Basic - Floor area(s) covered with standing water located behind bar.
36-73-4    Basic - Floor soiled/has accumulation of debris/ food debris located under ice bins and bar equipment behind bar counter.
31B-04-4    Basic - No handwashing sign provided at a hand sink used by food employees located at warewashing area, next to mop sink.
03A-02-5    High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed panna cotta (58F - Cold Holding); tiramisu (51F - Cold Holding) located inside cooler unit near coffee/dessert station, less than 4 hours. Operator removed food items into another cooler unit, maintaining temperatures at +or- 41F and below. **Corrective Action Taken**
29-34-4    High Priority - Vacuum breaker missing at hose bibb or on fitting/splitter added to hose bibb located between three compartment sink and mop sink.
22-02-4    Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime. Observed soiled soda gun nozzle and holster behind bar counter.
