Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

08B-49-4    Basic - Employee personal food not properly identified and segregated from food to be served to the public. Employee personal food stored on shelf above pan for employee food in walk-in cooler. Manager discarded employee food. **Corrected On-Site**
23-03-4    Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Gasket of reach-in cooler beneath make station.
16-46-4    Basic - Old labels stuck to food containers after cleaning. Containers stored on shelf across from three compartment sink. Manager placed container in dish area to be rehashed. **Corrective Action Taken**
33-16-4    Basic - Open dumpster lid. Dumpster behind building. Manager closed the lid. **Corrected On-Site**
08B-12-5    Basic - Stored food not covered. Croissants stored on rack in back of kitchen. Manager placed pan on top of croissants. **Corrected On-Site**
12A-16-4    High Priority - Employee began working with food, handling clean equipment or utensils, or touching unwrapped single-service items without first washing hands. Employee entered kitchen from dining room and began scooping ice without washing hands. Manager had employee wash hands. **Corrective Action Taken**
03B-01-6    High Priority - Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Item in warmer above make table: sausage (123F - Hot Holding). Manager stated item placed in warmer 15 minutes prior to temperature being taken. Manager voluntarily discarded item. **Corrective Action Taken**
53A-05-6    Intermediate - No currently certified food service manager on duty with four or more employees engaged in food preparation/handling.
