Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

36-11-4    Basic - Floors not maintained smooth and durable. -floor covering in disrepair in back room. -walk-in cooler floor in disrepair.
08B-38-4    Basic - Food stored on floor. -box of soft drink syrup stored on wet, soiled floor in back room. **Repeat Violation**
14-36-5    Basic - Interior of refrigerator or freezer in disrepair/has exposed insulation. -exposed insulation in deli cooler at front counter in close proximity to uncovered meats and cheeses. Walk-in cooler/freezer shelves with rust that has pitted the surface. -walk-in cooler shelves rusted. **Repeat Violation**
23-03-4    Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. -fan cover in walk-in cooler soiled with dust/debris. -interior of cold drawers on cook line soiled with food debris. -shelf under flat grill has build up of food debris.
12A-19-4    High Priority - Employee washed hands with cold water. -employee only turned on cold water to wash hands. Educated employee. **Corrective Action Taken**
03A-02-5    High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. -tuna salad 48, deli ham 45, sliced cheese 45 less than 4 hours per operator. States employees are not very good at keeping walk-in cooler door closed during prep times. **Repeat Violation**
41-10-4    High Priority - Toxic substance/chemical improperly stored. -can of oven cleaner above oil, vinegar and spices on dry storage shelf. **Corrected On-Site**
41-18-4    High Priority - Warewashing sanitizing solution exceeding the maximum concentration allowed. -per manufacturers instructions on quat tablet container, concentration should be 200ppm. 3rd sink approx 400ppm.
