Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

24-08-4    Basic - Equipment and utensils not properly air-dried - wet nesting. Observed wet nesting of pans on rack across from dish machine.
08B-38-4    Basic - Food stored on floor. Observed buckets of sauce stored on floor in walk in cooler. Operator moved for proper storage. **Corrected On-Site**
23-03-4    Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed interior walls, pipes and fan of beverage walk-in cooler soiled with food debris, dirt, slime or dust.
09-01-4    High Priority - Employee touching ready-to-eat food with their bare hands - food was not being heated as a sole ingredient to 145 degrees F or immediately added to other ingredients to be cooked/heated to the minimum required temperature to allow bare hand contact. Establishment has no approved Alternative Operating Procedure. Observed employee cutting ready baked bread and placing lemons on glasses with bare hands. Corrected and Educated operator on bare hand contact conditions. Operator corrected process used. **Corrective Action Taken**
08A-05-6    High Priority - Raw animal food stored over/not properly separated from ready-to-eat food. Observed raw ground beef stored over marinara sauce. Operator moved for proper storage. **Corrected On-Site**
31A-11-4    Intermediate - Handwash sink used for purposes other than handwashing. Observed hand wash sink at end of cook line with strainer in it used as dump sink. Educated operator on proper usage and operator removed strainer. **Corrected On-Site**
53A-05-6    Intermediate - No currently certified food service manager on duty with four or more employees engaged in food preparation/handling. Observed no certified food Manager on duty with one bar tender, five cooks and one server.
27-16-4    Intermediate - Water with a temperature of at least 100 degrees Fahrenheit not provided/shut off at employee handwash sink. Observed hot water only reaching 88F at hand wash sink next to ice machine and in Pizza area.
