Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

36-34-5    Basic - Ceiling/ceiling tiles/vents soiled with accumulated food debris, grease, dust, or mold-like substance. Throughout the kitchen area. **Warning**
24-05-4    Basic - Clean glasses, cups, bowls, plates, pots and pans not stored inverted or in a protected manner. Observed plates ready to be used not stored inverted at prep area, and coffee station. **Warning**
32-12-5    Basic - Covered waste receptacle not provided in women's bathroom. Observed employees bathroom accessed by woman with an uncovered receptacle. **Warning**
14-09-4    Basic - Cutting board has cut marks and is no longer cleanable. Observed cutting boards grooved at prep area and reach in coolers. **Warning**
35A-03-4    Basic - Dead roaches on premises. Observed dead roaches 1 in the grill area, one in the employees bathroom. **Warning**
12B-12-5    Basic - Employee drinking from an unenclosed beverage container in a food preparation/clean dishware area and the container does not have a dispensing mechanism to prevent hand contact with lip contact area of drink container. 35B-01-4    Basic - Exterior door has a gap at the threshold that opens to the outside. Observed an air gap in the back door as well as the side door by ice machine. **Warning**
33-09-4    Basic - Garbage not placed in a receptacle for storage until pick up to make the garbage inaccessible to insects and rodents. Observed trash bags stored around d trash receptacle. **Warning**
10-17-4    Basic - In-use knife/knives stored in cracks between pieces of equipment. Observed knife and a fork stored between the wall and three compartment sink. Employee removed them. **Corrected On-Site** **Warning**

12B-13-4    Basic - Opened employee beverage container in a cold holding unit with food to be served to customers. Observed a bottle drink inside reach in cooler, also inside chest freezer. Manager took drinks out and discarded them. **Corrected On-Site** **Warning**

01B-02-5    High Priority - Stop Sale issued on time/temperature control for safety food due to temperature abuse. Observed smoked beef (50F - Cold Holding); sweet plantains (51F - Cold Holding); chorizo (50F - Cold Holding); chicken nuggets (52F - Cold Holding) all cold holding at walk in cooler. As per manager items have been cold holding in unit from previous days. **Warning**

53A-05-6    Intermediate - No currently certified food service manager on duty with four or more employees engaged in food preparation/handling.
