A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Ceiling/ceiling tiles/vents soiled with accumulated food debris, grease, dust, or mold-like substance.
Observed throughout kitchen and ware washing area.
Basic - Ice buildup in reach-in freezer and/or walk-in freezer.
Observed in the reach in freezer,sliding door unit, chest freezer located in the dry storage area, by ice machine.
Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust.
Observed exterior of reach in cooler soiled with accumulation grease and food debris.
Observed reach in cooler gaskets soiled with accumulation grease and food debris,unit opposite cookline. **Corrected On-Site**
Basic - Single-service articles not stored inverted or protected from contamination.
Observed togo food containers not inverted, located on shelf opposite cookline. **Corrected On-Site**
High Priority - Nonfood-grade bags used in direct contact with food.
Observed raw pork stored in shopping bags located in the chest freezer by the ice machine. **Repeat Violation**
High Priority - Raw animal food stored over or with ready-to-eat food in a freezer - not all products commercially packaged.
Observed raw chicken with cooked pork,located in the reach in chest freezer by the entrance to the dry storage area. **Corrected On-Site**
High Priority - Wiping cloth sanitizer solution exceeds the maximum concentration allowed.
Observed chlorine strength at greater than 200ppm. Operator diluted to 100ppm. **Corrected On-Site**
