Violations:
A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Cold holding equipment not maintained in good repair. Do not store time/temperature control for safety food in this unit until the unit is repaired. Cooler under make table in disrepair and cooler in prep area had an ambient temperature of 51°F due to being unplugged. Manager removed all foods to walk in cooler. **Warning**
Basic - Employee personal items stored in or above a food preparation area, food, clean equipment and utensils, or single-service items.
Observed cell phones being stored on prep tables throughout kitchen area. Manager removed. **Corrected On-Site** **Warning**
Basic - Single-service articles improperly stored.
Observed cases of happy meal boxes being stored on floor in drive thru hallway and cases of straws being stored on floor in dry storage area. **Warning**
High Priority - Raw animal food stored over/not properly separated from ready-to-eat food.
Observed raw shell eggs being stored on top of milk and raw beef patties. **Warning**
High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit.
Observed the following foods temperatures greater than 41°F
lettuce (50F - Cold Holding); sliced cheese (55F - Cold Holding); sliced ham (51F - Cold Holding)
All located in prep area. RIC had an ambient temperature of 51°F due to being unplugged. Manager moved all foods to walk in cooler and plugged in cooler. **Corrective Action Taken** **Warning**
High Priority - Time/temperature control for safety food identified in the written procedure as a food held using time as a public health control has no time marking and the time removed from temperature control cannot be determined.
Observed cheese stored on line with no time marking. As per manager cheese had only been the line for about an hour. Manager added time marking. **Corrected On-Site** **Warning**
Intermediate - Handwash sink not accessible for employee use at all times.
