Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

08B-38-4    Basic - Food stored on floor. Observed oil container stored on floor next to steam table. Operator moved the oil container to the shelf. **Corrected On-Site** **Repeat Violation**
10-20-4    Basic - In-use tongs stored on equipment door handle between uses. Observed three tongs stored on oven door. Manager removed the tongs and sending to the three compartment sink to be cleaned. **Corrective Action Taken** **Repeat Violation**

02D-01-5    Basic - Working containers of food removed from original container not identified by common name. Observed rice and sugar container not identified by common name. At storage area and serving area.
08A-05-6    High Priority - Raw animal food stored over/not properly separated from ready-to-eat food. Observed raw beef stored over cooked beef and cooked pasta and cooked potatoes at walk-in cooler. Operator started to relocate the products. **Corrective Action Taken** **Repeat Violation**
03A-02-5    High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed green mussels (50 F- cold holding); clams (50 F - Cold Holding) at reach in cooler located at cook line. As per manager for less than two hours. Operator added ice to the products for rapid cooling. **Corrective Action Taken**
29-34-4    High Priority - Vacuum breaker missing at hose bibb or on fitting/splitter added to hose bibb. Observed a hose installed under three compartment sink at chicken station missing vacuum breaker.
01C-05-4    Intermediate - Clam/mussel/oyster tags not maintained in chronological order according to the last date they were served in the establishment. Observed clam tags not maintained in chronological order. **Repeat Violation**
22-02-4    Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime. Observed can opener soiled at chicken station.
31A-09-4    Intermediate - Handwash sink not accessible for employee use at all times. Observed hand wash sink blocked with garbage can, one located at chicken station. Operator moved the garbage can. **Corrected On-Site**
