Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

14-09-4    Basic - Cutting board has cut marks and is no longer cleanable. Observed a purple cutting board on the preparation reach in cooler at the kitchen entrance. **Warning**
12B-02-4    Basic - Employee eating in a food preparation or other restricted area. Observed a cook drinking on the line in an open cup. The manager removed the cup. **Corrected On-Site** **Warning**

22-08-4    Basic - Interior of oven/microwave has accumulation of black substance/grease/food debris. Observed the oven soiled interior by the walk-in cooler. **Warning**
27-10-4    Basic - No hot running water at mop sink. Observed water temperature at92°F. **Warning**
23-03-4    Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed several reach in cooler gaskets soiled throughout the kitchen. **Warning**

08B-12-5    Basic - Stored food not covered. Observed a pan of fish not covered in the upright freezer by the ware washing area. The manager covered the fish. **Corrected On-Site** **Warning**
42-01-4    Basic - Wet mop not stored in a manner to allow the mop to dry. Observed the mops in the empty mop bucket. **Warning**
09-01-4    High Priority - Employee touching ready-to-eat food with their bare hands - food was not being heated as a sole ingredient to 145 degrees F or immediately added to other ingredients to be cooked/heated to the minimum required temperature to allow bare hand contact. Establishment has no approved Alternative Operating Procedure. Observed a manager handling large pieces of ice in the ice machine. **Warning**
12A-05-4    High Priority - Employee used tobacco, ate, or drank then engaged in food preparation, handled clean equipment or utensils, or touched unwrapped single-service items without washing hands. Observed a cook drink on line and continue to prep food without washing his hands. **Warning**
22-02-4    Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime. Observed the can opener blade soiled. **Warning**
31A-09-4    Intermediate - Handwash sink not accessible for employee use at all times. Observed at the front line entrance. **Repeat Violation** **Warning**
16-32-5    Intermediate - Incorrect chemical test kit provided for measuring the concentration of the sanitizer solution used in the three-compartment sink and/or dishmachine. Observed the triple sink has quaternary sanitizer and only chlorine test strips available. **Warning**
27-06-4    Intermediate - No hot running water at three-compartment sink. Observed the water temperature at 92°F. **Warning**
31B-02-4    Intermediate - No paper towels or mechanical hand drying device provided at handwash sink. Observed at the drink station. The manager put paper towels. **Corrected On-Site** **Warning**
27-16-4    Intermediate - Water with a temperature of at least 100 degrees Fahrenheit not provided/shut off at employee handwash sink. Observed two different hand washing sinks with water temperatures at 91°F. **Warning**
48-04-4    Propane tank (larger than 2.7 lb. water capacity/1 lb. gas capacity) located inside of the building. For reporting purposes only. Observed. five tanks upstairs next to the drink walk-in cooler. Observed another tank under the hand washing sink.
