Violations:
A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Ceiling/ceiling tiles/vents soiled with accumulated food debris, grease, dust, or mold-like substance located throughout kitchen area. **Repeat Violation**
Basic - Current Hotel and Restaurant license not displayed. Observed current hotel license dated October 1, 2021 posted in frame, on wall. **Repeat Violation**
High Priority - Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed and tested chlorine sanitizer at kitchen dish machine at 0ppm. **Warning**
High Priority - Nonexempt fish offered raw or undercooked has not undergone proper parasite destruction. Fish must be fully cooked or discarded. Establishment offers raw fish/snapper used and served raw in "ceviche" offered on menu. Also, pan seared salmon is offered on pan, not fully cooked. Observed no parasite destruction letter regarding Halpern's Steak and Seafood, which is the supplier to restaurant establishment regarding their seafood. **Warning**
High Priority - Vacuum breaker missing at hose bibb or on fitting/splitter added to hose bibb. Observed vacuum breaker missing at splitter added to hose bibb at mop sink area. **Repeat Violation**
Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime.
Observed soiled soda nozzle located behind bar. Employee removed and cleaned soda nozzle at the time of inspection.
Observed old food debris between slicer located on top of reach in freezer at kitchen area. **Corrective Action Taken**
