Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

40-06-5    Basic - Employee personal items stored in or above a food preparation area, food, clean equipment and utensils, or single-service items. Jacket hanging on rack with clean utensils.
36-73-4    Basic - Floor soiled/has accumulation of debris. In reach in freezer room and behind beer reach in cooler in back kitchen. Wall soiled on cooks line under hoods. Wall soiled at potato cutter. Ceiling air vent soiled over microwave in kitchen.
36-17-5    Basic - Floor tiles missing and/or in disrepair. At the front of kitchen and by step in kitchen.
10-20-4    Basic - In-use tongs stored on equipment door handle between uses. One the fryer door handle, operator moved. **Corrected On-Site**
14-47-4    Basic - Nonfood-contact equipment exposed to splash/spillage not constructed of materials that are corrosion resistant, non-absorbent, smooth and easily cleanable. Door jam between kitchen and back kitchen.
23-03-4    Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Hood filters soiled above flat top. Ice machine exterior. Exterior sugar bin. Exterior smoker. Interior reach in freezer in side storage room.
25-06-4    Basic - Single-service articles not stored inverted or protected from contamination. Aluminum pan on top of reach in cooler faced upwards.
29-49-6    Basic - Standing water in bottom of reach-in-cooler. In beer reach in cooler in back kitchen, and in silver reach in cooler on cooks line.
29-20-5    Basic - Standing water or very slow draining water in handwash sink, three-compartment sink, or mop sink. Very slow drain at Handwash sink in back kitchen.
08B-12-5    Basic - Stored food not covered. Bottle of gin behind bar no lid.
08B-17-4    Basic - Unwashed fruits/vegetables stored with ready-to-eat food. Box of lemons over boiled beef in reach in cooler.
29-11-4    Basic - Water leaking from pipe and/or faucet/handle. At Three compartment sink behind bar. Air conditioner in kitchen leaking into bucket.
42-01-4    Basic - Wet mop not stored in a manner to allow the mop to dry. In mop bucket outside by smoker.
12A-18-4    High Priority - Employee dried hands on clothes/apron/soiled towel after washing. Employee rinsed hands at Three compartment sink then dried them on her apron. **Warning**
12A-07-5    High Priority - Employee failed to wash hands before putting on gloves to initiate a task working with food. After employee discarded contaminated buns he changed gloves but no Handwash. **Warning**
12A-12-4    High Priority - Employee switched from working with raw food to ready-to-eat food without washing hands. Employee placed raw beef on flat top then grabbed hamburger buns with the same gloves. **Warning**
14-15-4    High Priority - Nonfood-grade containers used for food in direct contact with food.
01B-03-5    High Priority - Stop Sale issued due to adulteration of food product. Liquor bottle with gin inside and dead fly floating in gin.
29-34-4    High Priority - Vacuum breaker missing at hose bibb or on fitting/splitter added to hose bibb. By back door at smoker area.
22-02-4    Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime. Interior reach in cooler in back kitchen. Interior door of ice machine and white plate inside. Can opener blade. Interior microwave. Interior oven inside kitchen. Interior outside smoker. **Repeat Violation**
31B-02-4    Intermediate - No paper towels or mechanical hand drying device provided at handwash sink. At back Handwash sink and bar sink, employee placed towels at sink. **Corrected On-Site**
53B-02-5    Intermediate - No proof of required state approved employee training provided for employee hired more than 60 days ago. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233. 1 employee working in kitchen.
02C-02-5    Intermediate - Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked. Cooked beef, meatloaf, and spaghetti made previous days.
41-17-4    Intermediate - Spray bottle containing toxic substance not labeled. 3 spray bottles on chemical rack with no labels.
