A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Dead roaches on premises.
Observed approximately 20 dead roaches in food storage area adjacent to restaurant. Food storage area is not annotated on current restaurant plans. Restaurant is using area to stored frozen and dry foods, along with single use items. **Warning**
Basic - In-use utensil stored in standing water less than 135 degrees Fahrenheit.
Multiple utensils stored in container of water 82F near oven. Water removed. **Corrected On-Site**
Basic - Label on a food item prepared and packaged onsite for customer self-service does not include product identity/description, date product was packaged and name and address of the establishment that prepared and packaged the food.
Prepared date for packaged sea moss stored in grab and go reach in cooler is not on product. Product was removed due to stop sale. **Repeat Violation**
Basic - No handwashing sign provided at a hand sink used by food employees.
At hand washing sink in women's restroom. Inspector emailed sign. **Corrective Action Taken**
High Priority - Food with mold-like growth. See stop sale.
In back food storage area, four moldy plantains in box. Plantains discarded. **Repeat Violation** **Admin Complaint**

Observed seven live roaches in food storage area behind two reach in freezers adjacent to restaurant. Food storage area is not annotated on current restaurant plans. Restaurant is using area to stored frozen and dry foods, along with single use items. **Warning**
High Priority - Stop Sale issued due to food originating from an unapproved source.
Food/ice received from unapproved source/no invoice provided to verify source. See Stop Sale.

High Priority - Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit.
Chicken stored in steam table in kitchen 118F. Chicken placed in steam table approximately one hour prior. Chicken moved to oven to reheat. **Corrective Action Taken**
Intermediate - No chemical test kit provided when using sanitizer at three-compartment sink/warewashing machine or wiping cloths.
No test kit available.
Intermediate - No plan review submitted and approved - food storage area added. Must submit plans and plan review application to DBPR H and R Plan Review office located at 2601 Blair Stone Rd., Tallahassee, FL 32399-1011. Plans must be submitted AND approved within 60 days.
