A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Dead roaches on premises.
1 dead roach in dry goods and office area in rear of the kitchen. Manager removed and sanitized the area. **Warning**
Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust.
Gaskets on walk in cooler and walk in freezer have mold like substance. **Warning**
Basic - Unprotected ice machine in a customer/nonsecure area.
Ice machine outside of back door to kitchen is accessible to other persons and is not locked nor does it have overhead protection. **Warning**
High Priority - Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly.
Dish machine is currently reading 0 ppm chlorine. Set up three-compartment sink at 100 ppm chlorine. Sanitization will occur in three-compartment sink until dish washer can sanitize properly. **Warning**
High Priority - Operating with an expired Division of Hotels and Restaurants license.
License expired 02/01/2022.
License was renewed during inspection and is current through 02/01/2024. **Corrected On-Site** **Warning**
High Priority - Rodent activity present as evidenced by rodent droppings found.
Approximately 35 rodent droppings found on top of dish machine in rear of kitchen. Manager removed and sanitized the area. **Warning**
High Priority - Rodent rub marks present along walls/ceilings.
Rodent rub marks located along rear wall and ceiling area of ware washing station. **Warning**
High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit.
In upright glass two door cooler at salad station:
mozzarella cheese (48F - Cold Holding); potato salad (48F - Cold Holding)
Employee moved to another cooler. **Corrective Action Taken** **Warning**
High Priority - Vacuum breaker missing at hose bibb or on fitting/splitter added to hose bibb.
No vacuum breaker on hose bib of mop sink outside rear kitchen door. **Warning**
Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime.
Can opener on prep table has built up food debris.
Cutting board on reach in cooler by pass through window has food debris buildup. **Warning**
